Quick & easy vegan spicy sausage pasta. Heat/sear sausage slices in a saucepan with a little olive oil (I used vegan kielbasa), add your favorite pasta sauce, I like Sockarooni cause it has a kick to it and toss in your cooked brown rice pasta. Mix together, heat theough and serve. #health #food #vegan #gf #pasta

Vegan twice baked potatoes/ potato skins and marmite baked beans.
Clean and prick potatoes with a fork and microwave for 5 min.
Once cooled, cut in half and scoop out the goodies leaving enough around the edge to retain their shape.
Mix potato “flesh”, vegan sour cream, a little earth balance, herbs and spices in a bowl with a fork (add as much or as little as you want).
Return the mashed potato to his jacket, top with paprika & vegan Parmesan and bake on 350 for 15-20min.
Broil for a minute or two at the end to crisp.
For the means just mix a tsp of marmite with a can of Heinz and heat through.
Gluten free, vegan pesto pasta and garlic bread.
I think I’ve finally found a vegan pesto recipe I like after trying a few recipes out and adjusting them.
2 cups whole leaf basil
1/3 cup EVOO
1 cup pine nuts
4-6 cloves garlic (depending on taste)
1/3 cup nutritional yeast
Salt and pepper to taste
Toss it all in a blender until it’s smooth- e voila.
I just added olives, cherry tomatoes, vegan Parmesan and almond slivers but mushrooms, asparagus and anything else you fancy are also delish.
For the garlic bread I mixed half a stick of earth balance with 3 cloves garlic then spread it in my sliced gf sandwich sub. Wrap in foil and put in the oven at 350 for 5 minutes.
Also this cupcake prosecco from my local coop is amazing. Must try making bellinis with it some time.
I don’t eat polenta but thought this would be a great recipe for those who do.
